You'll need a Si Stebbins stack. By simply getting a glimpse of the bottom card of the deck when they hand it back to you, you'll know which three cards they've turned over, as they'll be the three cards immediately following the one you glimpsed. I hope that helps clarify things for you.

Yeah, what Clemente said is spot on for the first part. For the second part, when he picks up the deck he initially handed over, I'd say he actually gave him an Invisible Deck, also set up in Stebbins. He counts to where the first card of the stack is, then pulls out the three cards, pressing just like you would with an Invisible Deck.
The suit order he uses for the Stebbins stack is Spades (1), Hearts (2), Clubs (3), Diamonds (4).
What a killer trick!
How does one arrange an Invisible Deck into a Si Stebbins stack? And to top it off, he even does it with the deck completely reversed.

I've thought about it a bit differently. What I would do is add two more cards, meaning a 54-card Invisible Deck. I'll explain the two extra cards at the end. My Si Stebbins stack follows the pattern Jorge Luengo uses in his show: Spades, Hearts, Clubs, and Diamonds.
The stack follows the Si Stebbins order. Then, you split the deck in half, 26 cards each. If you do this, you'll have the Ace of Spades faced with its opposite color, meaning the Ace of Clubs (roughed on the face side of each card) (the black Aces on top of the deck). The next card would be the 4 of Hearts, faced with its opposite color, the 4 of Diamonds, and so on until the end, where you'd have the Jack of Hearts faced with the Jack of Diamonds (at the bottom of the deck).
Once you've done that, add two extra cards to the bottom of your deck: two red Jacks, but in the opposite order of the previous pair. So, the Jack of Diamonds faced with the Jack of Hearts.
If you do this, you can complete the cycle. Of course, the two new cards must have the same back color as the rest of the deck. Now you just need to know from which end you should deal out the deck.
For example, if they name the Jack of Hearts, the Ace of Clubs, and the 4 of Diamonds, you know that the Jack of Hearts is at the bottom of the deck, and the other two cards (Ace of Clubs and 4 of Diamonds) are the two cards on top of the deck.
If you watch the video, since his first card is the King of Clubs, you'll count four pairs of invisible cards, and the fifth pair will be the King of Clubs. After that, the Si Stebbins sequence continues with the 3 of Diamonds and the 6 of Spades.
