Well, to be honest, I don't have many yet 😅
I started with 'Cartomagia Fundamental' by Vicente Canuto; I also have 'The Art of Magic' by Kaplan; a few books by Borja Montón, and from Páginas publishing house, some they released for free as PDFs on their website. One of them is 'Pensar La Magia,' which contains passages from many magicians' books like René Lavand, Houdin, Tamariz... and another, for their 25th anniversary, which includes 25 effects, articles, and routines 🤷🏻♂️ haha.
Next, I'm hoping to get 'El discurso con método' by Armando De Miguel (though it's out of print, and De Miguel himself told me they aren't planning to re-release it for now); 'The Magic of Ascanio Volume I' by Arturo de Ascanio; and Juan Tamariz's trilogy: 'The Five Points of Magic,' 'The Magic Way,' and 'The Magical Rainbow.'
Of the ones I own... 'Cartomagia Fundamental' is the most instructional. Kaplan's is a step up (for me, at least), and the others are more like a compendium for checking out ideas and mentalities from other magicians 😅
Right now, I'm diving into PENSAR LA MAGIA, which compiles texts and reflections from some of history's most influential magicians.
It's super interesting for really "thinking about magic" – covering theories of interpretation, meaning, and so on.
Really fascinating.
You can find it for free online in PDF format; it's not for sale.
Any book you pick up will teach you something.
For starting out in card magic, my favorites are Cartomagia fundamental and the first three volumes of La escuela cartomagica.
Now I'm getting into the Tarbell Course, which covers a bit of everything, and I'm really happy with them.
Ascanio's Magic, Volume 1 is fantastic for the theory and structure of magic.
I'm also a big fan of diving into theory, and Ascanio's approach to illusion is just brilliant to me.
And the novel "Engañar a Houdini" has me totally hooked. It doesn't teach any tricks, but it tells the story of an apprentice magician, and you live through his fears, his dreams, and his struggles right alongside him. I'm finding myself really identifying with the main character in so many ways, and I'm picking up a lot about the magic world.
It's tough to pick just one.
I've really enjoyed so many. Just to name a few:

I'm really enjoying Roberto Light's trilogy right now.
It's self-working card magic with a lot of patter.

As a newcomer, Vicente Canuto's Foundational Card Magic is a must-have.
