I'm not sure about the very beginning, but then he does a Bottom Change when he talks about the beard. After that, the video cuts, and right at that moment, he makes a switch and picks up a green deck with just one blue card on top. He then ditches the blue card, and everything turns green.
He manages to get Will to say green because if blue and red are already taken, he has to say green. He won't say yellow, purple, or orange... it's a psychological force.
As for the beginning, the only thing that comes to mind is cards with a rough and smooth surface or some other gimmick.
