Because there are actual color-changing decks, like the Chameleon (just to name one), or effects that use the same principle to achieve a color change (for instance, a card with a back that appears to change from blue to red).

I'm using the Chameleon deck, where all the cards have red backs, and one card has a double back: blue and red.
